How the Chocolate Bars were being Made in the Philippines

Chocolates aren't as easy to make as we thought. Last July 21, 2021 , I was invited to a chocolate factory tour at Paranaque to witness how our local choclate was made, and I was surprised as I enter the building because of how our favorite dessert was made.








I never thought that  local chocolates can be as high quality as we have tasted in different counties, because yes! Godel Chocolate made it!


We love how this brand made a various selection of chocolate flavors that can be served into different group of people.

Let me share what I have learned in the process of making these yummy deserts.

Gift Unboxing

As we enter the building, the staffs immediately guided and reminded us about the safety protocols that we have to be remembered so everything will run smoothly. They also gave us rags and caps to protect the food that we are gonna witness.


They also gave us some information about how chocolate was made from bean to bar, and what does real chocolate looks like and how does it look on the packaging.


PROCESS:

 Sorting

 - In this process, staffs are sorting the beans to know what are the beans that are good for manufacturing the chocolates. No hortcut on this, because it is a manual process of choosing and sorting. 

- They also check the moisture content of the beans, so they know if the beans are ready t be processed, and what are the needed temperature for the next step which is Roasting. 










Roasting

 - Roasting has a specific temperature that is needed to be set to the machine, so that we can get the perfect texture that we needed.








Cracking

- Cracking is done after sorting. In this process, we are cracking the cacao beans to get the actual nibs, and husk that will be used in different way.




 Winnowing

- and Winnowing helps the separation of nibs and husk, because husk will be used as a tea later on.







 Refining

- Refining is where the nibs go, to grind all the nibs and make it into a thick liquidy consistency. In this part, you may now taste the refined cacao, but this doesn't have any added ingredients yet. But as we have tasted it, we realized that the actual cacao isn't as sweet as we thought. It is a mixed taste of bitter and sour, that we are tasting more if we tried to eat the dark chocolate.




Conching

- Conching is where the sourness of the cacao was being lessen, and being more refined. It takes up to how many hours before we get the ideal taste of the chocolate that we want, That's why, machines are big help in making chocolates. (that are also available in their page)




 Tempering and Dosing

- We sometimes see this process on social media when we watch asmr baking videos, especially on Youtube and Facebook. In this process, we are using the graphite table to aim the ideal temperature of the chocolate so we can get the crystalized snappy chocolate that we always want. Crunchiness as some says.







 Moulding 

- Moulding is where the chocolate is being molded by a molder, to get the ideal look of the chocolate on the outside/design.









 Cooling

- After molding, chocolates are being placed in the fridge for a certain degrees for a certain hours.



Packaging

- Then being released to the packaging section where the machineries are the one that will seal it. We have witnessed how sensitive the machineries that they used. Even a small bubble, or 1gram has been taken away, it won't be accepted by the machines.






Quality control, and a great deal and great taste by our local chocolate factories. It is also best to use in baking, or cooking your favorite champorado at home.
